Mr FF is coming home tomorrow after lots of frequent flying so I followed my own advice this morning and went to the market in Arles to do my shopping. This morning's autumn produce was all about the mushrooms and in particular cepes. These type of mushrooms are a personal favourite of mine and are delicious eaten on their own as a meal.
*Brush them very well and pat them clean taking care not to bruise or damage them - remember they are sensitive little souls.
*Slice them evenly as much as you can - I prefer mine of medium thickness. Put them to one side.
* Crush a couple of large cloves of garlic and finely chop a bunch of continental parsley. Mix these two together and don't be afraid to be generous with the garlic.
*Saute the garlic and parsley in olive oil for a few seconds and then add the cepes, turn frequently until soft and golden. Again be gentle with the turning.
*Eat the cepes straight away with some course ground pepper and a sprinkle of good sea salt. Fresh, chunky bread (preferably a sour dough) dunked into some olive oil is the natural accompaniment.
